Homemade Granola Bars

These homemade granola bars were fast and easy to put together.  They aren’t the healthiest in the world (I always cringe when I put a stick of butter into anything), but they are absolutely delicious.  If eaten at room temperature, they tend to crumble a bit.  I recommend wrapping each bar in a square of plastic wrap and throwing it in the freezer.  That way, they are individually portioned and have a longer shelf life.

With a few spoonfuls of plain Greek yogurt, these made a delicious and filling breakfast.  On their own, they are a no-fuss snack packed with flavor.  I’m looking forward to trying variations of these – including ways to cut down on the fat – in the near future.

Homemade Granola Bars

Adapted from All Recipes

2 1/4 cups honey almond granola (I used Bob’s Red Mill brand)

1/2 cup all-natural, whole wheat flour

1/2 tsp. baking soda

1/2 tsp. vanilla extract

1/2 cup butter, softened

1/4 cup honey

3 tbs. brown sugar, packed

1/2 cup raisins

Non-stick cooking spray

Preheat oven to 325º.

Spray a 9 x 13 baking pan with non-stick cooking spray.

In a large mixing bowl, combine all ingredients by hand or with a hand mixer on a low setting.

Firmly press the mixture into prepared baking pan to form a single uniform layer.  Bake 18 minutes, taking out halfway through cooking time to press down granola again.  Let cool then cut into bars (I made 8 large-ish bars).
