BLT with Romesco Sauce

Switching out the classic mayonnaise in this BLT for some homemade romesco sauce elevated this sandwich just the right amount.  It wasn’t so wildly fancy or different that I felt I was eating a version of a BLT – it was a good ol’ BLT, but with a hint of sweetness and spiciness that was absolutely heavenly.  The fresh, high quality of the lettuce and tomato, both from our CSA, really took this to the next level and made it an incredibly enjoyable sandwich.

BLT with Romesco Sauce

2 slices whole wheat bread, toasted

4 slices bacon

1/2 medium tomato, sliced into 1/4″ slices

4-5 leaves red leafy lettuce, trimmed or halved to fit on bread

2 tbs. romesco sauce

 Cook bacon in microwave on paper towel covered plate 3-5 minutes until crispy.  Alternatively, you can fry it in a pan, but I find it doesn’t get very crispy that way.

Spread romesco sauce on both sides of toasted bread.  Top with lettuce, tomatoes, and bacon.  Assemble sandwich and enjoy!
