Cheddar Grilled Cheese with Radishes

Maybe it’s because we live less than a three minute walk away from Melt Bar & Grilled, but I don’t make grilled cheese sandwiches at home as much as I used to.  Since my afternoon class was cancelled yesterday, I thought I would treat myself to some cheesy, melt-y, radish-y goodness at home.

As you can see, this ended up being more of a fork-and-knife sandwich thanks to a spatula mishap.  It was still really, really good, though.  I loved the bite of the radishes and sharpness of the cheddar combined with the buttery goodness of the cheese and bread against the light heat of the hot sauce.  Surely, it paled in comparison to a Melt sandwich, but it was still darn good.

Cheddar Grilled Cheese with Radishes

2 1/2″ slices of sour dough bread

6 oz. very sharp cheddar cheese, thinly sliced

2-3 medium or large radishes, thinly sliced

2-3 tbs. unsalted butter, softened

1 tbs. garlic flavored hot sauce

Freshly cracked black pepper

Liberally butter both sides of each slice of bread (using roughly 1 tbs. of softened butter).  Place one layer cheese on bottom slice of bread.  Season with freshly cracked black pepper and garlic flavored hot sauce.  Add radishes and top with remaining cheese and other slice of bread.

Heat remaining butter in a medium saucepan over medium heat until melted.  Add sandwich and sauté 3-4 minutes per side until golden brown and cheese is melted.  If cheese is hesitant to melt, cover for a minute or two to steam.
